Pizza in the oven (with red fish)

Ingredients

Directions

  1. Knead the pizza dough. Pour warm water into a deep container. Add sugar and fresh compressed yeast.
  2. Mix thoroughly with a whisk or spoon, the yeast should completely dissolve.
  3. Cover the container with the yeast solution with foil and leave for 15-20 minutes at room temperature for the yeast to come to life. During this time, a foam cap should appear on the surface of the yeast talker.
  4. Next, pour lukewarm milk and olive oil into a bowl. Stir.
  5. Sift flour with salt and add in small portions to liquid ingredients.
  6. Knead for a soft and patchy dough. Place the dough on a work table and knead thoroughly for 5-7 minutes. During this time, the pizza dough should become soft, smooth and pliable. Use as little flour as possible during kneading so as not to "clog" the dough.
  7. Grease a deep bowl with a thin layer of vegetable oil and put the dough in it. Cover the bowl with plastic wrap or a damp towel and leave the dough warm for 1 hour to rise.
  8. In the meantime, prepare the pizza topping. Grate mozzarella or other favorite cheese on a coarse grater.
  9. Cut the salted red fish into thin slices.
  10. After an hour, take out the dough, it should increase significantly in volume.
  11. Place it on a floured table and divide into 4 equal parts (you can divide into 2 or 3 parts if you like, depending on the size of the pizza you want).
  12. Roll each part of the dough into a smooth ball. Cover them with plastic wrap and leave for 15 minutes to "rest" the dough.
  13. Turn on the oven to heat up together with a baking sheet or with a stone for bread to 220-230 C. After 15 minutes, put a bun of dough on a sheet of paper and roll it into a circle with a diameter of about 22 cm and a thickness of about 4 mm (if you like pizzas with thick dough, then roll it out thicker).
  14. Cover the tortilla with tomato sauce, 1-2 cm short of the edges of the dough, as shown in the photo.
  15. Top with a generous handful of grated cheese.
  16. Gently drag the formed pizza onto a hot baking sheet and bake for about 8-10 minutes until golden brown (depending on the thickness of the dough and the characteristics of your oven, it may take more or less time to bake pizza, so be guided by the color of the crust).
  17. Let the finished pizza cool for a few minutes. Then place the salted red fish slices on top.
  18. Sprinkle with dry basil and serve.
