But it turns out that pizza, which was prepared only in Naples, gained popularity throughout Italy only after the Second World War, having previously become the favorite fast food in the United States.

  1. In a bowl, combine yeast, water, sugar and olive oil. Sift flour into a bowl, add salt, stir. Make a "well" in flour, pour liquid into it and start kneading the dough with a fork or hand. Stir in a circle, in one direction all the time, grabbing flour from the walls of the "crater" until you get a soft, sticky dough. Tighten the bowl with cling film and let sit for 10 minutes.
  2. Lubricate a work surface with olive oil, transfer the dough to it and knead it lightly by stretching and folding in half. Cover the dough with foil or linen napkin and leave for 1.5 hours. During this time, knead the dough every 30 minutes. for 20-30 sec.
  3. Form the dough into a ball, brush the surface with olive oil and transfer to a clean bowl. Leave it on for 20-30 minutes. at room temperature.
  4. Transfer the dough to a work surface and roll into a circle or oval. Cover the dough with cling film and leave for 10 minutes. Then remove the foil and roll out the dough as thin as possible, ideally to a thickness of 3-4 mm. Lightly dust the dough with flour if necessary.
  5. Preheat oven to 250 ° C. Cut the tomatoes crosswise and cover with boiling water for 2 minutes. Then pour over cold and peel. Cut the tomatoes into circles, remove seeds if desired.
  6. Place the dough on a baking sheet and brush lightly with olive oil. Arrange the tomatoes, salt and pepper. Cut the mozzarella into circles and place on top of the pizza. Drizzle with olive oil and bake for 10 minutes. The mozzarella should melt and the edges of the pizza should be golden. Remove the pizza and sprinkle with basil leaves.
