Sift flour into a large bowl, add yeast and salt. Gradually pour into it, stirring constantly, 175 ml of hot water. Add vegetable oil, mix thoroughly. Transfer the dough to a floured table and knead for 5 minutes. Roll the dough into a ball, cover with a towel and leave at room temperature for 15 minutes.
Wash and dry the tomatoes and basil. Disassemble the basil into leaves and grind. Cut the tomatoes into circles, the mozzarella into small pieces.
Divide the dough into 4 parts, place them on a tray, cover with cling film and let stand for 15 minutes.
Roll out each piece of dough into a tortilla about 15 cm in diameter. Grill the tortillas for 4-5 minutes, until the dough is golden brown. Turn over with special tongs and cook for 1 min. Transfer to a work surface.
Brush one side of each flatbread with a little olive oil.
Put the tomato circles, sprinkle with basil leaves, spread the mozzarella slices on top. Return to grill and cook 3-5 minutes, until cheese begins to melt. Arrange the pizzas on portioned plates. Drizzle with the remaining olive oil and season with salt and pepper.
