Poppy seed cake with nuts

The cake is tender and creamy, with an interesting texture due to the addition of poppy seeds. Pie dough is made from eggs and melted butter. The top of the cake is sprinkled with nuts before baking - they become crispy and make the cake even tastier.

  1. Prepare the ingredients.
  2. Turn on the oven to heat up to 180°C.
  3. Prepare a baking dish with a diameter of 20 cm. Line the bottom and sides of the form with parchment or grease with a thin layer of butter and lightly sprinkle with flour.
  4. Melt the butter in the microwave or on the stove and let it cool completely.
  5. Grind nuts (I have walnuts) into not very small crumbs.
  6. In the bowl in which you will knead the dough, beat the eggs - beat for 1-2 minutes.
  7. Whisking constantly, add all the sugar in batches. Continue whisking until you get a fluffy and dense foam.
  8. Pour poppy seeds into the resulting egg mass and stir with a spatula.
  9. While stirring the mass, add portions of the cooled butter. Stir until smooth.
  10. Sift flour with baking powder and fold into mixture in two additions. Stir.
  11. The dough should be smooth and moderately thick.
  12. Fill the prepared form with dough and smooth the surface.
  13. Sprinkle the cake with an even layer of nuts.
  14. Bake the poppyseed cake in a preheated oven at 180°C for about 45 minutes (note that time may vary depending on the oven). Check the readiness of the cake with a wooden skewer: it should come out clean and dry from the center, without traces of batter.
  15. Remove the cake from the oven and let it cool completely on a wire rack.
  16. Remove the cooled poppy seed cake from the mold, place on a dish and sprinkle with powdered sugar.
  17. Poppy cake is ready.
