  1. Peel the onion and cut into rings.
  2. Wash, dry and chop cilantro or parsley greens.
  3. Rinse the ribs with cold water and place in a large bowl or saucepan.
  4. Add onion, chopped herbs, peppercorns to the ribs, pour in a little water, add vinegar, salt and freshly ground pepper.
  5. Marinate the ribs for 2-3 hours (you can leave in the refrigerator overnight).
  6. Place the ribs on a greased baking sheet and pour over the marinade in which they were soaked.
  7. Put the baking sheet in an oven preheated to 200-220 degrees, and keep over high heat until the marinade has practically evaporated.
  8. After that, reduce the heat to 180 degrees and bring the ribs until tender, about 20 minutes.
