As a child, I lived not far from Kazakhstan and therefore I know the taste of real shurpa. It wasn't cooked from pork, of course. But let's not be snobs and step back from the classics - here's a recipe for pork shurpa.

  1. We wash the meat well. Fill with water and cook over very low heat for 2 hours. If the water boils away, you can add a little boiling water. In the meantime, while the meat is being cooked, we wash and peel the vegetables and cut them into pieces.
  2. Melt lard in a frying pan and add onions and carrots to the cracklings. After 5 minutes, add tomatoes and bell peppers to them. Fry for another 10 minutes and add the potatoes.
  3. When the meat is cooked in a saucepan, take it out and cut it into pieces corresponding to the vegetables. We send back to the broth. Add vegetables there and cook the soup for 20 minutes. Add spices and herbs 5-7 minutes before cooking. Our pork shurpa is ready! Bon Appetit!
