Pork skewers with mango and chili

  1. Soak 12 wooden (or bamboo) skewers in cold water for 1 hour. Trim excess fat from the meat and cut the tenderloin into small pieces.
  2. Mix crushed garlic, finely chopped chili (without seeds), ginger and olive oil for the marinade. Mix the pieces of meat with the marinade, add salt and pepper to taste. Place in refrigerator for 1 hour.
  3. Heat up a barbecue or charcoal grill. Grease the grill with a little oil. Grill the pork pieces on skewers for about 10 minutes (or until desired doneness). Brush the meat with the marinade during cooking. Transfer the cooked skewers to a plate, cover with foil and leave in a warm place for 15 minutes.
  4. Peel the mango and cut in half (as close to the pit as possible). Cut each half into thin slices. Add lime zest and juice, finely chopped chili (no seeds) to mango. Add black pepper and stir gently. Serve the skewers with a cooked salad. Enjoy your meal!
