Minced potato casserole is a popular dish. Let's make it more interesting by adding onions, carrots and spinach. Pre-fry the minced meat with onions and carrots, so in the finished dish the taste of minced chicken will become brighter. Spinach will add juiciness to the dish, and cheese - an appetizing "cap". It turns out delicious, in addition, such a casserole is a great way to hide spinach from little fussy.)

  1. Peel and wash vegetables. Rinse and dry the spinach.
  2. Cut the potatoes into small pieces. Pour water in a saucepan so that it completely covers the tubers. Bring water to a boil, salt, cook over low heat for 15-20 minutes, until the potatoes are soft (depending on the variety and size of the pieces).
  3. After draining the water, mash the potatoes in mashed potatoes and cool slightly.
  4. While the potatoes are boiling, grate the carrots on a fine grater. Cut the onion into small cubes.
  5. Heat a frying pan with vegetable oil (2 tablespoons), put onions and carrots. Fry vegetables for 3 minutes, stirring occasionally.
  6. Add the minced chicken to the pan.
  7. Fry the minced meat and vegetables for 5-7 minutes, constantly breaking the minced meat with a spatula so that large lumps do not form.
  8. Add salt and ground pepper.
  9. Remove the spinach from the tough stems and chop finely.
  10. Turn on the oven to heat up to 180 degrees.
  11. Place the spinach in a skillet, stir everything and remove from heat.
  12. Add eggs to the slightly cooled mashed potatoes, add a pinch of salt and pepper.
  13. Mix the potato mixture thoroughly.
  14. Grease a baking dish with oil (1 tablespoon). Put half of the potato mass into a mold.
  15. Spread the fried minced chicken with vegetables and spinach evenly on top of the potatoes.
  16. Top with the remaining mashed potatoes and send to the preheated oven. Bake at 180 degrees for 20 minutes.
  17. Grate the cheese on a medium grater.
  18. After a while, remove the form from the oven, sprinkle the casserole with grated hard cheese.
  19. Return the potato casserole dish to the oven and cook for another 10-15 minutes, until the cheese melts (be guided by the characteristics of your oven).
  20. Potato casserole with spinach and minced chicken is ready. This casserole can be served with fresh vegetables, sauces, I really like with sour cream.
