Pancakes made from zucchini and boiled potatoes, with garlic and herbs, I recommend as a side dish or as an independent dish.

  1. Prepare foods according to recipe. Wash the potatoes, cook in their skins until tender.
  2. Wash and grind greens.
  3. Peel the boiled potatoes, mash with a mashed potato (or mince).
  4. Wash the courgettes, peel, grate on a coarse grater. Peel and chop the garlic.
  5. Combine potatoes, zucchini, garlic and herbs in a bowl, salt, add eggs. Mix everything well.
  6. Add flour. Mix. The dough for potato and zucchini pancakes is ready.
  7. Preheat a frying pan. Pour in vegetable oil. Put zucchini and potato pancakes in hot oil with a tablespoon.
  8. Fry potato pancakes over medium heat on both sides until golden brown (2-3 minutes on each side). Add oil as needed.
  9. Potato pancakes with zucchini are ready. Serve on lettuce leaves, with sour cream or mayonnaise.
