Tortilla is a traditional Spanish dish made from eggs and potatoes. An interesting version of this dish is a tortilla with tomatoes and sausage. The addition of juicy tomatoes and aromatic sausage adds a pleasant variety to the Spanish omelet with potatoes - the tortilla turns out to be richer, brighter, more nutritious and delicious!

  1. We immediately turn on the oven to warm up to a temperature of 180 degrees.
  2. Peel the potatoes and cut them into quarters.
  3. Peel and cut the onion into small cubes.
  4. Cut the sausage into cubes.
  5. Cut the tomatoes into large pieces.
  6. Heat 1 tbsp in a skillet over medium heat. a spoonful of vegetable oil. We spread the onion and, stirring it, fry for about 2-3 minutes, until translucent.
  7. Add the sausage.
  8. Stir and fry for about 3 minutes.
  9. Add potatoes and pour in the remaining vegetable oil.
  10. While stirring, fry the potatoes with onions and sausage for about 5 minutes. Then reduce the heat to low, cover and cook, stirring occasionally, for about 10 more minutes, until the potatoes are soft.
  11. Then add the tomatoes.
  12. Stir and fry for about 2 minutes.
  13. Break the eggs into a bowl. Add salt and ground pepper.
  14. Stir with a whisk until smooth.
  15. Pour vegetables with sausage with the resulting egg mixture.
  16. We release the pan from the handle and send it to the oven, preheated to a temperature of 180 degrees, for about 10-15 minutes, until the egg mixture sets.
  17. The potato tortilla with sausage is ready. Cool it slightly.
  18. Cut the tortilla into portions and serve, decorate with herbs if desired.
