The original protein omelet with carrots and fresh herbs is a great option for a hearty, tasty and, at the same time, very low-calorie breakfast or snack, which can be whipped up from the simplest products. Try it!

  1. You can use any greens for making a protein omelet.
  2. Separate the egg yolks from the whites. You won't need yolks for this recipe.
  3. Rinse the greens, dry and chop finely. Save 1 sprig of herbs to garnish your finished omelet if desired.
  4. Peel and grate the carrots.
  5. Add salt and black pepper to the egg whites. Whisk the mixture lightly to dissolve the salt (20-30 seconds). Lush, stable foam does not need to be achieved, it is enough for the mixture to just become a little more bubbly.
  6. Add chopped greens to the proteins and mix everything well with a whisk.
  7. Heat vegetable oil in a skillet over medium heat. Put the carrots there and, stirring, fry for 3-4 minutes, until soft.
  8. Reduce heat to low. Move the toasted carrots closer to the center of the skillet to create a kind of vegetable cushion. Pour a mixture of proteins and greens over the carrots
  9. Fry the omelet for 5-6 minutes, until the proteins are cooked.
  10. Light protein omelet with carrots is ready. Transfer the omelet to a plate and serve, garnish with herbs if desired.
