Fragrant, truly autumn pumpkin-banana muffin with nuts and caramel icing is made in the form of a loaf and, probably, that is why it is commonly called bread.

  1. We prepare all the necessary ingredients.
  2. If you do not sell ready-made pumpkin puree, bake 250 g of peeled and coarsely chopped pumpkin in the oven (20 minutes at 180 ° C), and then puree.
  3. Turn on the oven to heat up to 180 degrees.
  4. Mash the banana with a fork.
  5. Whisk the egg with sugar.
  6. Add pumpkin puree, banana and vegetable oil to the egg.
  7. Mix until smooth.
  8. Add flour sifted with baking powder and a pinch of salt. Mix until the dough is homogeneous.
  9. Add chopped walnuts. We mix.
  10. The dough is ready.
  11. Grease a cake tin with oil and put the dough into it. We send it to the oven for 45-55 minutes. Check readiness with a toothpick, it should come out dry.
  12. We take out the finished banana bread from the oven and let it cool.
  13. While the bread is cooling, prepare the caramel frosting.
  14. Pour sugar into a small saucepan or saucepan (preferably with a thick bottom). Add water and put on medium heat.
  15. The sugar will dissolve and begin to boil and caramelize. Until the sugar darkens, do not mix it. Cook until caramelized (golden brown).
  16. Take the saucepan off the fire.
  17. Immediately spread the butter in the center, and pour the cream into the center of the melted butter.
  18. Mix the icing, return to the fire and bring to a boil, stirring.
  19. We remove the finished caramel from the heat - at first it will be liquid, and as it cools, it will thicken and begin to harden.
  20. Put the banana cake on a dish and pour over the caramel icing.
  21. If desired, you can sprinkle the top with chopped nuts.
