A recipe for a bright cake, the dough for which is prepared with the addition of pumpkin puree, raisins, dried apricots and candied fruits. Pumpkin cake with dried fruits and candied fruit is a delicious homemade fragrant pastry.

  1. Clean the pumpkin from seeds. Cut pumpkin into small pieces.
  2. Place pumpkin on a baking sheet lined with parchment. Bake the pumpkin in the oven at 180 degrees for 20-30 minutes.
  3. The readiness of the pumpkin can be checked with a knife - if the knife freely enters the pulp, then the pumpkin is ready. Remove the baked pumpkin from the oven, set aside to cool completely.
  4. While the pumpkin is cooling, you need to beat the eggs with sugar.
  5. Pour sunflower oil into beaten eggs. Continue whisking.
  6. When the baked pumpkin has cooled, peel it off. Send the peeled pumpkin to the blender bowl.
  7. Use an immersion blender to puree the pumpkin.
  8. Add pumpkin puree to egg mixture. Mix at low mixer speed.
  9. Mix flour with baking powder. Sift half of the flour into the dough.
  10. Add salt, vanilla, cinnamon and cloves.
  11. Mix all the combined ingredients well with a mixer at low speed. Then add the remaining flour with baking powder to the dough.
  12. The finished dough should fall off the spatula freely.
  13. Lastly, add candied fruits, raisins, finely chopped dried apricots to the dough. With a spatula, mix the dough with dried fruits and dried apricots.
  14. Preheat oven to 180 degrees. Grease a baking dish with butter.
  15. Pour the dough into a greased mold. Bake pumpkin pie for about 40 minutes at 180 degrees.
  16. Sprinkle the pumpkin cake with powdered sugar.
