Great Halloween Cakes - Ghost Cupcakes! These orange pumpkin muffins are delicious, the crumb is juicy, soft, with a beautiful orange color and a bright orange flavor. Cheese cream and chocolate drops are easily transformed into "ghosts" that not only decorate cupcakes, but also make them taste perfect!

  1. To prepare pumpkin puree, peel the pumpkin and seeds, cut into small pieces, transfer to a saucepan.
  2. Pour in the water and cook the pumpkin, covered, for about 15-20 minutes, or until the pumpkin is fully cooked. Try to mash one piece of pumpkin with a fork - if this works out easily, remove the dishes from the stove.
  3. Puree the pumpkin and remaining liquid in a blender until smooth pumpkin puree. Measure out the desired amount of puree (250-280 g) and let it cool.
  4. In a bowl, combine eggs and sugar.
  5. Beat the eggs and sugar with a mixer at high speed until a fluffy light mass is obtained, into which add soft butter.
  6. Beat the egg-sugar mass with butter until smooth and smooth.
  7. In the resulting cream, add the grated orange zest and pumpkin puree. Mix with a mixer at low speed.
  8. Combine flour with baking powder and sift into bowl with pumpkin mixture.
  9. Knead a homogeneous dough.
  10. Divide the pumpkin batter into paper cup lined cups, taking up slightly more than half of each cup.
  11. Bake the pumpkin-orange muffins in the oven, preheated to 180 degrees, for about 25 minutes. Cool the finished cupcakes.
  12. For cream, beat soft butter with a mixer with powdered sugar until fluffy. Add cream cheese.
  13. Beat the cream again until smooth.
  14. Transfer the cream cheese to a piping bag fitted with a round tip and pipe into cooled pumpkin muffins.
  15. Decorate cupcakes with chocolate drops, imitating the eyes and mouth of "ghosts".
