Quiche with zucchini and feta in brown rice dough

Quiche with zucchini and feta in brown rice dough

Ingredients

Directions

  1. Boil the rice in boiling water until tender. Drain.
  2. Preheat oven to 230 degrees.
  3. In a bowl, combine 2 cups rice, grated gruyere and 1 egg. Place the dough in a round shape, flatten and press lightly to form a crust. Bake for 5-7 minutes to brown the edges.
  4. In a bowl, combine eggs, milk, coarsely grated zucchini, chopped greens and green onions, crushed feta, salt and pepper.
  5. Cool the oven to 190 degrees.
  6. Place the filling on a crust and flatten. Bake for 30-35 minutes until tender and golden brown.
