Quick cake with fresh peaches

Sometimes guests show up on the doorstep quite unexpectedly. If guests are coming to visit you, in just an hour you can prepare a simple but very tasty dessert - peach cake with whipped cream.

  1. Separate the whites from the yolks. Try not to get the yolk, fat or water to the proteins.
  2. In a bowl, beat the yolks with sugar until the yolks are light in color. Beat the whites with a pinch of salt with a whisk until stable peaks.
  3. Mix sweet yolks with flour. Add the egg whites one spoon at a time, stirring gently so that all the air in the proteins remains in the biscuit.
  4. Grease a mold with butter. Pour the dough into it and bake in an oven preheated to 180 degrees for 20 minutes until cooked.
  5. Transfer the cake to a wire rack to cool while you prepare the cream.
  6. Whip cream with powdered sugar until thick. Wash the peaches and cut into cubes.
  7. With a knife or using a special tool, cut the biscuit lengthwise into two cakes. Lubricate the bottom cake with raspberry confiture.
  8. Then apply a layer of cream and spread slices of fresh peach over it.
  9. Top with second cake.
  10. Garnish with the remaining cream and fruit pieces. Chill the peach cake in the refrigerator before serving.
