Do you like pies, but you don't have time to make yeast dough? Then my today's recipe will definitely help you out - we prepare a quick dough without yeast on soda! And as a bonus, we will bake sweet pies with apples and cinnamon - with a cup of tea or a glass of milk you will get a real treat for those with a sweet tooth.

For this recipe, I am very grateful to Sveta Khasanova (Lana): she cooked such pies with cottage cheese. Alternatively, you can not only bake the blanks in the oven, but also fry them in vegetable oil (do not forget that the filling must be safely hidden). It will be very tasty, but much more nutritious. From the specified number of ingredients used, I get 8 fairly large pies with a filling. You can make smaller pies, then there will be more of them.

  1. To prepare a quick yeast-free dough, we need the following ingredients: wheat flour of the highest grade, kefir and sour cream of any fat content (I have 2.5% and 20%), a medium-sized chicken egg (48 grams), refined vegetable (in my case, sunflower) oil , granulated sugar, baking soda and some salt. All foods should be at room temperature.
  2. Pour kefir into dishes suitable for kneading dough, add sour cream.
  3. We put sugar, salt and soda there. If you are going to cook yeast-free pies with unsweetened filling, reduce the amount of granulated sugar to 1 tablespoon. Mix everything thoroughly with a spoon or fork.
  4. Next, drive in a chicken egg and pour in a couple of tablespoons of odorless vegetable oil. Mix everything well again so that the liquid base becomes relatively homogeneous.
  5. After that, gradually (in 2-3 doses) sift 280 grams of premium wheat flour into a bowl. It is important to understand that flour from different manufacturers has different moisture content, so its amount may differ significantly from that indicated in the recipe. Knead a soft and slightly sticky dough.
  6. When the flour absorbs the liquid ingredients, the yeast-free dough is ready - you can immediately proceed to making the pies.
  7. If you want, you can make apple pies like I did. We divide the dough into the required number of parts (in my case there will be 8 pies), roll each into a ball.
  8. Then flatten the dough into a flat cake with the palm of your hand, put quite a lot of filling in the center (I have small cubes of apples with sugar and cinnamon), make cuts along the edges.
  9. We shape the future pie by simply crossing the opposite edges of the dough, laying them on top of each other. We shape the rest of the blanks in the same way.
  10. We transfer them to a baking sheet covered with baking paper, at a distance from each other. If desired, grease the workpieces with a mixture of yolk and milk.
  11. We bake in an oven preheated to 180 degrees until golden brown. My patties were ready in 25 minutes. By the way, if you want fried, mold closed blanks so that the filling does not fall out.
  12. Serve the pies warm - best with milk or tea.
  13. I made a cut of a still warm pie - the dough turns out to be very soft and tender. For the experiment, I left 2 pies on the table (I did not cover anything) - the next day they were no worse than fresh ones.
