Rabbit stewed with potatoes and olives in wine is a delicious, nutritious and aromatic dish. Thanks to the wine, rabbit meat turns out to be very tender and soft, lemon gives a slight sourness and aroma, olives go well with meat and potatoes. This meat stew with vegetables is the answer to a lunch or dinner meal search for the whole family.

  1. We prepare the necessary products.
  2. We wash and dry the lemon thoroughly. Remove the zest from the lemon, and then squeeze out the juice.
  3. Wash the rabbit meat, dry it with paper towels. We cut the carcass into portioned (large) pieces.
  4. Heat 2 tbsp in a frying pan. tablespoons of vegetable oil and spread the rabbit meat in one layer. Fry the meat over high heat on both sides for 2-3 minutes each, until golden brown. (I sautéed rabbit meat in two steps.)
  5. Transfer the fried meat to a heat-resistant ceramic dish or a large heat-resistant pot with a lid.
  6. We turn on the oven to heat up to 160 degrees.
  7. Peel the onion, rinse and cut into small cubes.
  8. Put the onion in the pan in which the meat was fried and fry for 3-4 minutes.
  9. Peel and dice the garlic. Rinse the parsley and chop finely.
  10. Add garlic and parsley to the onion and fry for 1 minute.
  11. Add the fried onions, garlic and parsley to the rabbit meat.
  12. Peel the potatoes, wash and cut into large cubes.
  13. Add potatoes, olives, lemon zest to the rabbit mold, add oregano, salt, ground pepper, pour in wine and lemon juice. We mix everything.
  14. We cover the form with a lid and send it to the oven preheated to 160 degrees. We simmer the dish for 1.5 hours.
  15. Put the finished rabbit meat with potatoes and olives on plates, decorate with parsley and serve.
