Raisin muffins with milk (microwave)

You don't even have to turn on the oven to make these fluffy raisin cupcakes - the microwave will do the job!

  1. Prepare the necessary ingredients. Pour boiling water over raisins for 10-15 minutes. Then drain the water and dry the raisins.
  2. Break an egg into a bowl, add sugar, salt on the tip of a knife and a pinch of vanilla.
  3. Beat the egg with sugar, salt and vanilla with a whisk until a homogeneous foamy mixture is obtained.
  4. Melt the butter and let it cool down a bit.
  5. Pour milk, sunflower oil and cooled butter into the egg mixture.
  6. Thoroughly mix the liquid base.
  7. Combine flour with baking powder and sift into a bowl with a liquid base.
  8. Mix with a whisk until the dough is homogeneous.
  9. Add raisins to the dough.
  10. Stir the raisins into the batter.
  11. Divide the batter into silicone muffin cups, taking up about half the volume of each. I got 6 pieces.
  12. Cook cupcakes in the microwave at 800W for 3 minutes.
  13. Remove the finished cupcakes from the molds and put on a plate.
  14. When cupcakes have cooled, dust them with powdered sugar, drizzle with chocolate icing, or decorate as you wish.
  15. Microwave Raisin Cupcakes are ready to serve.
