Strange as it may seem, I learned to cook a real shurpa in Moscow at the dacha of a family that had lived in Uzbekistan for a long time. We were celebrating a birthday, there were many guests and decided to make a large-scale dish.

Ingredients

  1. Prepare food, wash meat, peel vegetables. Pour cold water into the cauldron and put the meat. Cook over low heat. Be sure to skim off the foam. After about 40 minutes, add the onions and carrots.
  2. Add finely chopped bacon, hot peppers and apples, put whole, add spices. Cook for at least half an hour. Add potatoes. And when the shurpa is boiled again, add the tomatoes.
  3. Get the apples out of the shurpa. When the potatoes are ready, we check the shurpa for salt, taste and add finely chopped sweet onions.
  4. Shurpa is ready. Serve meat and vegetables in a separate bowl. Bon Appetit!
