Peel the pineapple and cut into four parts; cut a core out of each.
Place two quarters of the pineapple in a blender. Grind until smooth, then strain through a fine sieve into a bowl. Transfer to a glass jar and refrigerate.
Place the remaining pineapple and lemongrass on the grill or grill pan, cover and cook for 4-5 minutes on each side.
Send toasted pineapple, lemongrass, vodka and mint into a large jar. Cover and refrigerate for 8 hours or overnight.
For cocktails, mash the ginger in a shaker and cover with ice cubes. Add 1/2 cup infused vodka, 1/2 cup reserved pineapple juice, chamomile tea, and lemon juice.
Shake and strain into chilled martini glasses. Garnish with lemongrass leaves and serve.
