Rice and curry with chicken and coconut milk

Ingredients

  1. Heat oil in a frying pan, add finely chopped red onions, grated ginger root, crushed garlic and leeks (only the white or light green part), after a minute add red and green chili peppers to the onion. Fry everything together for another 1 minute, then send the diced chicken breast to the vegetables.
  2. When the chicken is browned, season with salt, add 2 tablespoons of curry, fry for another 2 minutes, then pour the coconut milk along with the loose flesh, add the rest of the curry and let simmer for 10-15 minutes.
  3. At this time, boil the rice (I took jasmine rice).
