Rice fried with egg and green onions

  1. Heat a frying pan, add rice, pour in 225 ml of boiling water, add salt, stir and cover. Cook over low heat for 15 minutes.
  2. Remove the rice from the heat, let stand for 5-10 minutes, transfer the rice to a dish, beat lightly with a fork and let cool.
  3. Heat half of the vegetable oil in a frying pan, fry the chopped onion until brown (3 minutes). Pour the remaining vegetable oil into a skillet, heat it, add cold rice and fry it, stirring occasionally, for 30 seconds.
  4. Spread the contents of the pan evenly over the bottom and pour in the beaten egg. At the end of cooking add chopped green onions, soy sauce, stir and serve.
