Rice in coconut milk

Ingredients

  1. Rinse the rice with water.
  2. Finely chop the onion, carrot, garlic and ginger.
  3. Heat 2 tablespoons of vegetable oil in a saucepan or saucepan. Put vegetables and fry, stirring occasionally, for about 3-4 minutes.
  4. Add carrots and fry for another 5 minutes. Put turmeric in a saucepan and fry for another 1 minute.
  5. Pour in coconut milk. Bring to a boil and let simmer over low heat, covered for 10 minutes.
  6. Add rice and pour in water.
  7. Bring to a boil over high heat, reduce heat to a minimum, and cook, covered, until all the liquid is absorbed and the rice is tender. If the liquid evaporates before the rice is cooked, add boiling water in small portions.
  8. Sprinkle the finished rice with finely chopped cilantro and serve.
