Rice salad with smoked chicken and strawberries

  1. Cook the rice using the folding method: in a large saucepan, bring 2-3 liters of water to a boil, add salt, add rice, stir, bring to a boil again and cook over medium heat without a lid for 15 minutes. Turn off the heat, cover the pot and leave for 10 minutes. Then fold on a sieve, quickly rinse with ice water and dry.
  2. While the rice is cooking, cut the strawberries and cucumbers into equal sized wedges or cubes. Sprinkle with balsamic vinegar, add a little salt, pepper well and stir gently.
  3. Remove the chicken breast from the bone, remove the skin. Cut the pulp into cubes with a side of 1.5 cm. Chop the parsley very finely, lightly salt it.
  4. Combine chicken breast with rice, parsley and olive oil. Add the cucumbers with the strawberries and all the liquid, as well as the basil, add more pepper and salt if necessary, stir gently. Serve immediately.
