This golden rice, streaked with chopped carrots and toasted shredded coconut, has a sweetish flavor due to the added raisins, cloves, black peppercorns, and cinnamon sticks that are best removed from the rice before serving. This dish is perfect for lunch or dinner, paired with dal soup and some salad. This dish is prepared quickly, looks attractive, has a delicate aroma and, most importantly, it will satisfy the taste of even the most picky gourmet.

  1. Chop carrots
  2. If using basmati rice, sort, rinse, soak and drain.
  3. Heat ghee or vegetable oil in a heavy teflon-lined saucepan over medium heat. Without getting smoke, toss sesame seeds, cloves, black pepper, coryna stick, and coconut into the oil. Cook, stirring occasionally, until the coconut is golden brown. Add the rice and sauté it for a few minutes, until the rice grains are slightly translucent.
  4. Add water and remaining ingredients, turn up heat and bring to a boil.
  5. Reduce heat to low, cover with a tight-fitting lid, and simmer slowly without stirring for 20-25 minutes. until the rice is puffy, the vegetables are soft and all the liquid is absorbed.
  6. Turn off the heat and leave the rice covered for 5 minutes. so that delicate grains gain strength. Before serving, remove the lid and loosen the hot rice with a fork.
