Rice with cilantro and lime

Ingredients

  1. Heat vegetable oil in a deep frying pan, add finely chopped onion and fry until soft for 5-7 minutes.
  2. Add finely chopped garlic and sauté for another minute.
  3. Add rice and sauté in oil for a few minutes.
  4. Add water, bring to a boil, reduce heat and simmer, covered, about 20 minutes, until tender.
  5. Remove from heat and add cilantro, juice and grated lime zest. Stir well and season with salt to taste.
