Boil the rice in boiling water until tender. Drain.
Heat the oil well in a wok or large skillet over medium heat. Add chopped green onions, thinly sliced sweet potatoes, thin strips of green peppers, and thin slices of carrots and zucchini. Fry for a while until soft.
Then add rice, sprouts, chopped mushrooms and chopped green onions. Cook for a while, stirring occasionally, until all ingredients are well heated, adding more oils as needed.
Combine honey and soy sauce, pour over rice with vegetables and stir well. Serve immediately.
