Chop the onion into rings, pepper into half rings, finely chop the garlic. The spinach can be left intact; if the leaves are too large, cut into strips.
Heat vegetable oil in a frying pan, fry the onion until golden brown, add mushrooms, pepper, garlic, cover and simmer for 10-15 minutes.
Remove the lid, add the spinach and soy sauce, and cook for a few more minutes, until the spinach is sluggish.
Serve the prepared mixture on the rice pad.
