Rice with squid

The fish broth can be substituted for cube broth.

  1. Use a sharp knife to cut the squid into rings. Chop the garlic and tomatoes.
  2. Heat oil in a refractory ceramic dish. Add squid rings and tentacles, cook over medium heat, stirring occasionally, for 5 minutes. Add garlic, tomatoes and 150 ml of broth. Reduce heat, cover and cook for 20 minutes.
  3. Add rice to skillet and serve immediately. Season with salt, stir well, cover and cook over high heat for 10 minutes, then reduce heat to medium, add strips of pepper, cover and cook for another 10 minutes. Remove skillet from heat and leave covered for 5 minutes before serving.
