Round Roman pizza is not the most popular in Italy, it is the exact opposite of the now fashionable Neapolitan: Roman - crispy and without sides. I saved the proportions of ingredients for the dough, which I found on the Internet a long time ago, but played with the technology a little. I had a sample in front of me from a Roman pizzeria that has 2 slices in the Gambero Rosso rating, and I wanted to achieve a similar result. The dough, although crispy, is not dry, to some extent even light.

  1. Prepare Roman pizza dough. Pour water into a bowl, add yeast and stir. Add salt and oil, stir. Gradually introduce flour, in 3-4 stages. Knead the dough, it should be smooth and elastic.
  2. Form a bun, place in a bowl, cover and leave at room temperature for 2 hours. After 2 hours, place a bowl of dough in the refrigerator for 36-40 hours.
  3. After this time, remove the dough from the refrigerator and leave at room temperature for 2 hours, then mold 2 balls of 160 g each, place them in a container, cover and leave for final proofing at room temperature for ~ 4-5 hours.
  4. While the dough is ripening, prepare the filling. Fry the sesame seeds in a dry skillet until golden brown.
  5. Cut the mushrooms into slices of medium thickness and fry them in a little vegetable oil until golden brown. Add sugar, mustard and soy sauce, stir, add prepared sesame seeds and stir again.
  6. Place the pizza stone on the upper shelf of the oven. Preheat the oven with the grill on to 230-240 ° С for about an hour.
  7. Stretch the pizza dough with your hands, without leaving the sides (you can use a rolling pin), lightly sprinkle with refined vegetable oil and lay out the mushrooms. Sprinkle with oil again and send to the oven until the pizza is fully cooked, about 4-5 minutes.
  8. Remove the pizza from the oven and immediately crush the tofu cheese on top of it, add the cashews and fresh cilantro leaves. Drizzle with sesame oil. Serve hot.
