Rum and raisin muffins

Raisin muffins are prepared with the addition of coffee and dark rum.

  1. In a small bowl, dissolve coffee in 5 tbsp. spoons of rum. Put the raisins in this liquid, set aside for 15 minutes.
  2. Turn on the oven to preheat to 170 degrees. Line 12 muffin cups with paper rosettes
  3. In a bowl mix flour, baking powder and salt.
  4. In a separate bowl, beat butter and sugar until fluffy.
  5. Gradually add the eggs to the butter mixture, beating well after each one.
  6. Continuing to beat the butter mixture at minimum speed, add flour and milk. Then add raisins with rum, mix.
  7. Pour batter into prepared molds, filling them 3/4 full.
  8. Place the molds with the dough in a preheated oven, bake the muffins for 25-30 minutes, until golden brown.
  9. Remove muffins from oven and let cool to room temperature.
  10. Meanwhile, prepare the glaze. In a small bowl, beat butter with rum, then gradually add powdered sugar, mix well.
  11. Spread frosting over muffins and garnish with raisins.
