Rustic potato salad with fried mushrooms

My children love salads with mushrooms, and since this salad without mayonnaise is very easy to prepare, I cook it for my family quite often. I advise everyone to try this delicious rustic potato salad with mushrooms.

Ingredients

  1. Wash the mushrooms well. If large, then cut into 2-4 parts (I cut each into 2 parts and left a few very small parts intact).
  2. Cut the onion into cubes and cover with cold water, leave for 10-15 minutes.
  3. Pour 3-4 tbsp into the pan. l. butter, immediately salt and pepper (mushrooms are like a sponge, they will immediately absorb spices). Cook for 5-7 minutes.
  4. Meanwhile, cut the cucumbers into small cubes.
  5. Remove the fried mushrooms from the stove, let cool.
  6. Meanwhile, peel and dice the potatoes. Place in a bowl, in which you will stir the potato salad with mushrooms.
  7. Add cucumbers, cooled mushrooms and onions drained from water to the potatoes.
  8. Add chopped herbs to the mushroom potato salad.
  9. Season with vegetable oil (3-4 tablespoons). Try it with salt and if not salted, add salt.
  10. Rustic salad with potatoes, mushrooms and cucumbers can be served immediately, or you can chill in the refrigerator for a couple of hours.
