Beetroot salad with chicken, carrots and greens can even be served on the festive table, as it is very tasty and looks bright and impressive on a plate! The natural sweetness of beets and carrots is complemented by the sharpness of garlic, boiled chicken fillet makes the dish hearty and nutritious, and a light dressing of vegetable oil, mustard and lemon juice perfectly combines all the ingredients into a holistic and healthy dish!

  1. Prepare the necessary ingredients. Wash and dry greens.
  2. Wash the medium-sized beets with the rough side of a clean kitchen sponge and transfer to a saucepan. Fill the beets with cold water level and put on the stove, over high heat.
  3. When the water boils, reduce the heat to a minimum and leave the beets to cook until soft (this will take about 40 minutes).
  4. Wash the carrots thoroughly from dirt and transfer to another saucepan. Pour the carrots with cold water and put on the stove, over high heat.
  5. When the water boils, reduce the heat to a minimum and leave the carrots to cook until soft (this will take about 25-30 minutes).
  6. While the vegetables are cooking, also boil the chicken fillet. Wash the fillet. Pour water into a saucepan, bring it to a boil, salt and dip the chicken fillet in salted boiling water.
  7. Bring the water to a boil, lower the heat and cook the fillets, covered, for about 25 minutes.
  8. Transfer the boiled chicken to a plate and set aside.
  9. Cool the boiled beets and peel them.
  10. Cool and peel the carrots as well.
  11. Cut the beets into strips.
  12. Transfer the beets to a salad bowl, pour in the sunflower oil and mix. Due to this, later the rest of the ingredients will not be so strongly stained with beet juice.
  13. Separate the chicken fillet into fibers.
  14. Carrot cut into cubes.
  15. Chop greens.
  16. Transfer the chicken fillet, carrots and greens to a salad bowl with beets.
  17. Peel the garlic and pass through a press.
  18. Add mustard, lemon juice, garlic, salt to the salad bowl.
  19. Stir.
  20. Put the salad on a flat plate and sprinkle with sesame seeds.
