I share my favorite recipe for a delicious and healthy sauerkraut salad with carrots and onions. Carrots are added to the salad without heat treatment, due to which a maximum of vitamins is preserved. Sauerkraut provides a pleasant crunch and sourness, and pickled onion adds piquancy. The salad is dressed with fragrant vegetable oil.

  1. We prepare the necessary products.
  2. If sauerkraut is too sour, then it should be washed and discarded in a colander.
  3. Peel the onion and cut into thin half rings.
  4. Marinate onions for salad. To do this, pour 100 ml of water at room temperature into a bowl, add ½ tbsp. spoons of sugar, ½ tbsp. spoons of salt and 2 tbsp. spoons of 9% vinegar. Put the onion in the marinade and leave for 15 minutes.
  5. We clean the carrots and rub on a coarse grater.
  6. Put the sauerkraut in a salad bowl. Add sugar, stir and leave for 5 minutes. We spread the carrots in a salad bowl with cabbage. We take out the onion from the marinade, put it on a strainer so that the marinade drains, and then add it to the cabbage with carrots.
  7. Finely chop the greens and send to a salad bowl with the rest of the ingredients.
  8. Add oil and mix all ingredients. Taste, add salt if necessary.
  9. Salad with sauerkraut, carrots and pickled onions is ready.
  10. Salad is suitable for meat, sausages, cereals, potatoes.
