A colorful salad with fresh strawberries, cucumbers, herbs and feta cheese will decorate any feast! The base of lettuce and fresh spinach gives the dish lightness, and the harmonious combination of salty cheese, sweet and sour strawberry sauce and fragrant juicy strawberries - a wonderful taste and mouth-watering look. An excellent option for a spectacular dish in a hurry. Try it!

Ingredients

Directions

  1. Cut the feta cheese into bite-sized cubes. Chop the basil leaves.
  2. Combine chopped cheese and basil. Add 2 tbsp. spoons of olive oil, mix and leave to infuse for a few minutes while you prepare the rest of the salad ingredients.
  3. Tear lettuce leaves into small pieces and arrange on a plate in an even layer.
  4. I divide all the ingredients in half and serve the salad to the table in portions.
  5. Tear the spinach leaves into small pieces and arrange on top of the lettuce leaves.
  6. Cut the cucumbers into thin slices and place on top of the greens.
  7. Remove stems from strawberries. Cut about 100 g of strawberries in half. Lay the strawberry pieces on top of the greens between the cucumber slices.
  8. Add pieces of feta cheese to the plate. The olive oil will settle to the bottom of the container in which the basil cheese was infused, so before putting the cheese on a plate, gently mix again or dip the pieces of cheese into the oil that has accumulated at the bottom of the container.
  9. Lightly pepper the salad.
  10. Cut the remaining strawberries into large pieces and place in a blender bowl. Add 3 more tbsp. spoons of olive oil and 1 tbsp. a spoonful of lemon juice.
  11. Beat everything for about 1 minute, until smooth. Taste the strawberry sauce and add salt and black pepper to taste. If necessary, you can add a little more lemon juice. If the strawberries are unsweetened, you can add a little sugar or honey to make the taste of the sauce balanced (sour-sweet-salty, with bright berry notes).
  12. Pour the prepared strawberry sauce into a gravy boat.
  13. Before serving, pour over the salad with strawberries, cucumbers and feta cheese sauce.
  14. Bon appetit!
