Salmon salad with sea buckthorn dressing

This is a very smart, healthy salad. And the dressing for this salad is so good that you can simply serve it with salmon or trout on toast.

  1. For dressing, place the sea buckthorn in a saucepan, top with orange juice and heat over medium heat. Heat, but do not boil. Cover and leave for 10-15 minutes.
  2. Wipe the dressing through a sieve, return to heat and boil a little, 3 minutes. Add honey, salt, pepper and stir. Pour in the lemon juice little by little and try the dressing. It should be sweet and sour. Cool and mix with 1 tbsp. l. olive oil. Try and use the leftover oil if necessary.
  3. Peel the apple, cut into 4 pieces and core, cut into small pieces and drizzle with lemon juice. Cut the cucumber and radish into circles. Tear lettuce leaves into small pieces. Combine prepared ingredients with half sea buckthorn dressing.
  4. Cut the fish into small pieces. Transfer the seasoned mixture to a salad bowl. Add fish, stir and drizzle with remaining dressing.
