Sand crumb cake with custard sour cream (without baking)

Sand crumb cake is prepared without baking, it can be prepared even when the oven is not available for one reason or another. This cake tastes a bit like a Napoleon cake.

  1. First prepare the cream.
  2. In a heavy-bottomed saucepan, beat the eggs, add sugar, vanilla and starch.
  3. Combine all the ingredients in a blender into a homogeneous mass.
  4. Add sour cream to the pan and again combine the ingredients with a whisk.
  5. Place the saucepan over medium heat and heat until the cream thickens, stirring constantly with a whisk. Do not bring to a boil, the cream will thicken earlier.
  6. Remove the thick hot cream from the heat and add 50 g of butter to the pan. Combine melted butter with cream.
  7. The cream turns out thick, flows down from a spoon in a thick stream. We send the pan with the cream to a cold place until it cools completely.
  8. To prepare sand crumbs in a large bowl, combine the sifted wheat flour and 70 g of sugar, mix. Roll 150 g of butter in flour and grate on a coarse grater directly into the mixture of flour and sugar.
  9. With your hands, grind the flour with butter into crumbs. Then divide the mass into two parts and fry the crumbs in a dry, heated frying pan until golden, stirring constantly.
  10. Roasting sand crumbs takes 8-10 minutes. Cool the first part of the crumb completely and fry the rest.
  11. Place a detachable ring on a large dish (I have a diameter of 19 cm) and distribute 2-3 tbsp along the bottom of the dish. spoons of cooled sand chips.
  12. On top, gently apply 2-3 tbsp. tablespoons of cold cream Try to spread the cream slowly so that the crumb does not rise and mix with the cream.
  13. Again make a layer of sand chips and apply a layer of cream. I got 4 layers of crumbs and 4 layers of cream. The last layer of cream should be thicker than the previous ones.
  14. Place the cake dish in the refrigerator for at least 2-3 hours, preferably overnight. The cream will harden and soak the sand crumb well. Top with white chocolate if desired. Grate it on a fine grater and sprinkle the surface of the cake.
  15. Carefully release the cake from the split ring. Delicious no-bake cake is ready to serve!
