Sardines in walnut-citrus breading

Fried sardines are always appropriate. Choose the breading to your taste, herbs too, and serve the fish with delicious bread and fresh herbs

Ingredients

• grated lemon zest - 1 tbsp. l.
• vegetable oil - 2 tbsp. l.
• rosemary - 5-6 leaves
• grated parmesan - 30 g
• medium sardines - 6 pieces
• ground almonds - 75 g
• salt

Directions

1. Peel the sardines from scales and entrails, rinse thoroughly (leave heads, tails and fins). Chop the rosemary.
2. Combine almonds, parmesan, zest and rosemary. Salt to taste, add vegetable oil and grind into a pasty mixture.
3. Preheat the oven to 180 ° C. Roll each sardine in breading and fry in a preheated pan for 1 minute. on each side, and then place in the oven for 10 minutes.
