An interesting weekend breakfast - delicious scrambled eggs in bread, with a hearty stuffing of minced meat and cheese. Such a beautiful, nutritious and delicious hot sandwich cooked in the oven will provide you with energy for a long time!

  1. We prepare the necessary products.
  2. Instead of minced chicken, you can use pork, beef, or whatever you like.
  3. You can substitute slices of loaf with slices of toast bread.
  4. It is better to get the butter out of the refrigerator in advance.
  5. Scrambled eggs in bread cook quite quickly, so it is better to turn on the oven right away and warm up to a temperature of 180 degrees.
  6. Peel and grate the onion or finely chop it with a knife, or chop it in a blender.
  7. Heat vegetable oil in a frying pan. We send the minced meat to the pan and add the chopped onion. Stir occasionally, fry the minced meat with onions over medium heat for about 10 minutes, until tender. Then add soy sauce, ground pepper and dried herbs (I have a mixture of Provencal herbs). We leave to cool.
  8. Divide the cheese into two parts. We rub one half on a grater, and cut the other into thin slices.
  9. Grease half of the bread (3 slices) with a thin layer of butter on one side.
  10. Cut out the middle of the 3 remaining bread slices, stepping back from the crusts by about 1 centimeter so that we get "frames" of bread
  11. Cover the baking sheet with parchment. Grease slices of bread with butter with ketchup. Put slices of cheese on top and send them to a baking sheet. On top of each sandwich with butter, ketchup and cheese, carefully put a "frame" of bread. Each sandwich will have a "window" through which you can see the ketchup and cheese.
  12. Put the fried minced meat in the "window" of each sandwich.
  13. Carefully break an egg into each "window" (right on the minced meat), trying to keep the yolks intact. Salt.
  14. We send it to the oven, preheated to 180 degrees, for about 10 minutes. Then carefully take out the baking sheet and sprinkle with grated cheese so that it does not fall on the yolks. Put it back in the oven for about 5-6 minutes. During this time, the yolks remained liquid.
  15. We wash the parsley, dry it and chop finely with a knife.
  16. Sprinkle the prepared scrambled eggs in bread with chopped parsley and serve.
