  2. Peel the onion, cut into slices 1-1.5 cm thick.
  3. Divide the sliced ​​onion circles into rings. We do not separate the largest two rings in diameter, but leave them together so that during frying they do not deform and retain their shape. This is important because in this "double ring" we will be frying eggs.
  4. Heat the vegetable oil in a frying pan and put all the onion rings in it.
  5. Sprinkle sugar on the onion rings.
  6. Cover with a lid and fry the onions over low heat for about 2-3 minutes on each side. A caramel "crust" should appear on the onion rings.
  7. Gently break the egg into a cup.
  8. Pour the raw egg from the cup into the largest "double" onion ring. Salt the egg to taste and cover. Fry eggs in onion rings for about a couple of minutes.
  9. As soon as the protein "grabs", the scrambled eggs are ready. If you cook for longer, the yolk will not run out.
  10. Rinse the parsley and chop finely.
