Scrambled eggs in pita bread, with cheese and herbs

Simple scrambled eggs will sparkle with new colors if cooked in pita bread, with cheese and herbs. Such originally cooked scrambled eggs will add variety to breakfasts or become a hearty snack.

  1. Prepare all required ingredients.
  2. Round pita bread is needed. If you bought a rectangular sheet of pita bread, use a lid or plate to cut two circles out of it to fit the bottom of the pan.
  3. Grate cheese on a coarse grater. Wash greens, dry and chop finely.
  4. Heat a frying pan and grease with oil. Lay out a circle of pita bread.
  5. Break eggs into a frying pan with pita bread, being careful not to damage the yolk. Add salt and pepper to taste.
  6. Sprinkle with half the chopped greens.
  7. Sprinkle with half of the grated cheese.
  8. Cover with a second round of pita bread. Press down gently to avoid crushing the yolk. Cover the pan with a lid and cook the eggs in pita bread over low heat for 5 minutes.
  9. Then turn over to the other side.
  10. Sprinkle with the remaining herbs and cheese. Cover and cook for another 3-5 minutes, until the cheese melts.
  11. Remove the cooked eggs in pita bread, with cheese and herbs, from the pan.
  12. Cut the scrambled eggs in pita bread into portions and serve hot.
