  2. Heat vegetable oil in a skillet over medium heat. Add onions and, stirring occasionally, sauté for 7-8 minutes, until soft and golden brown.
  3. Season the fried onions with lightly salt and pepper to your liking. Spread the onion over the bottom of the skillet with a spatula to form a continuous, even layer.
  4. Reduce heat to low. Make 5-6 small depressions (according to the number of eggs) in a layer of fried onions and break an egg into each indentation.
  5. Cook for another 4-5 minutes, until the egg whites are fully cooked and the yolks are cooked to the desired degree.
  6. Scrambled eggs with fried onions are ready. Chop the green onion finely. Sprinkle with herbs and serve.
