Scrambled eggs with spinach are a great alternative to banal scrambled eggs. It contains a lot of fiber, vitamins and minerals. Cook scrambled eggs and spinach for a healthy breakfast or an extraordinary quick dinner if you add cheese, bread and tomatoes to the dish.

  1. Finely chop the onion and garlic. Prepare spinach: remove tough stems, if present. Cut large leaves into large strips, leave small ones intact.
  2. Preheat a non-stick skillet over medium heat, melt the butter. Add onion and garlic and sauté, stirring frequently, until soft, without discoloration.
  3. Add spinach to the skillet and fry, stirring occasionally, for 5-6 minutes, until the leaves “wither” and the liquid at the bottom evaporates completely. Season with a little salt and pepper.
  4. Use a spatula to make 4 indentations in the spinach and break the eggs into them. Season with salt and pepper. Cover the pan with a lid for 2-3 minutes so that the protein completely grabs. Remove skillet from heat and place scrambled eggs and spinach on bowls.
