  1. Peel the onions and cut them into thin half rings with a sharp knife. Wash carrots, peel, cut in half lengthwise and chop into strips. Heat vegetable oil in a non-stick frying pan, add onions and carrots, stirring occasionally, sauté for about 5 minutes.
  2. Wash the potatoes, peel, cut into cubes and place in a saucepan. Pour 2 liters of cold water and bring to a boil. Add sauteed vegetables and bay leaves. Season to taste with salt and ground black pepper. Cook over low heat for 15 minutes.
  3. Put the fish in the soup and cook until tender. 5 minutes before the end of the cooking time, add the processed cheese. Remove the fish, cut into pieces, arrange on plates and pour the soup. Sprinkle with chopped herbs and serve with brown bread croutons.
