Shorpo, aka shurpa, chorpa, shorba and sorpa, is a rich soup that is cooked in Muslim countries in the East. It can be found in Turkish, Tajik, Turkmen, Kazakh and other cuisines.

  1. Heat oil in a cauldron or saucepan with a thick bottom. Fry chopped onions in it until golden brown. Rinse and cut the meat into medium pieces. Add it to the bow.
  2. Fry until the liquid evaporates. Cut the peppers and peeled potatoes into small cubes. Wash the carrots, peel and grate on a coarse grater. Also dice the tomatoes.
  3. Add carrots and spices to the meat. Stir and cook for a couple of minutes. Then add the peppers, tomatoes and tomato paste.
  4. Then pour in 2 liters of boiling water. Simmer the meat for 40 minutes. Next, add the potatoes and pour in the remaining boiling water. Boil the soup after simmering over low heat for 15 minutes.
  5. Finally, add chopped garlic, spices and salt to taste. Let the shorpo sit for 15 minutes. Add herbs when serving. Bon Appetit!
