  3. Now prepare the batter. Break the egg into a deep container. Add salt and whisk lightly.
  4. Add water and add wheat flour and baking soda. Mix everything well until a homogeneous dough is formed, similar in consistency to pancake dough. Taste it and, if necessary, correct it to your liking. Pepper lightly.
  5. Dip the shrimp into the batter, holding it by the tail.
  6. Heat vegetable oil in a skillet or a suitable saucepan. It is advisable that the oil completely covers the shrimp. Dip the battered shrimp gently into the boiling oil. (If you have a deep fat fryer, use it.) Fry the shrimp in batter on all sides until golden brown, about a minute. The smaller the shrimp, the less time it will take to fry.
  7. Place the cooked fried shrimp on a paper towel to remove any remaining oil.
