Quail shurpa is a very unusual and incredibly tasty soup. The recipe for this dish was shared with me by a hunter who constantly cooks quail in this way. This is a very good soup!

  1. Pour the prepared quail carcasses with cold water and bring to a boil. Then we drain the water, rinse the bird and put it in a cauldron, fill it with water again and cook until tender, removing the foam.
  2. After 15 minutes, put chopped onion and carrots, cut into rings. Let them boil for 7-8 minutes. Now add the diced bell peppers and tomatoes. Salt and pepper the soup, throw in the lavrushka.
  3. When the quail is almost ready, you need to add a handful of millet or noodles (at your discretion). Remove the finished soup from heat, let it brew for 10 minutes. When serving, sprinkle with chopped herbs. Bon Appetit!
