Sicilian style pizza

This gorgeous Helen Graves pizza is easy to make but rich in flavor - with ripe tomato sauce, a lovely base with lots of creamy mozzarella and topped with chunks of pepper and salami. The top can be adapted to suit your taste, but the specialty of this pizza is the good tomato sauce. The original recipe uses Cirio passata, which is made from Sicilian tomatoes. Sicilian-style pizza is made from a dough very similar to focaccia, just as light and fluffy. It differs from other types of pizza also in that the cheese is laid out before the tomato sauce. You can try olives and capers as topping.

  1. For the dough, combine all the ingredients and 50 ml of olive oil and knead the dough. Spread the remaining butter on a baking sheet, roll the dough in it and use your hands to shape it into a rectangle. Cover with a towel and let sit for 3 hours.
  2. For the sauce, chop the garlic with a knife. Heat olive oil in a saucepan and sauté the garlic and chili flakes for 30 seconds. Peel ripe tomatoes, remove seeds and grind with a blender. Add to the garlic and simmer for 20 minutes. Season with salt to taste.
  3. It is advisable to preheat the oven to 280 degrees or to the maximum of your oven. Spread the dough gently over the entire baking sheet. Top with chopped mozzarella.
  4. Top with sauce, top with slices of pepper and salami.
  5. In my oven, the maximum temperature is 250 degrees, so I baked for 25 minutes instead of the indicated 15.
  6. Sprinkle the finished pizza with grated Parmesan and basil leaves or your favorite herbs (I have cilantro).
