Skewers of corn and vegetables (in the oven)

Juicy and bright shish kebab of vegetables and corn cobs on skewers, which can be served both for an everyday lunch and for a festive table. Universal vegetable side dish for meat and fish dishes. Vegetables are cut into pieces, marinated and baked in the oven on skewers. Simple and tasty.

  1. Prepare all ingredients.
  2. Zucchini and eggplant use a small diameter.
  3. Cut the corn into small circles 1.5-2 cm wide.
  4. Wash and dry the zucchini. Trim the ponytails on both sides. Cut into slices up to 1 cm thick. Can be cut into thin slices using a vegetable peeler.
  5. Wash and dry the eggplant. Cut into circles or halves / quarters of circles up to 1 cm thick.
  6. De-seed the bell pepper. Rinse and dry. Cut into large pieces.
  7. In a large bowl, add corn, zucchini, eggplant, bell peppers, and cherry tomatoes.
  8. Peel the garlic and pass through a press.
  9. Add Italian herbs, lemon juice, olive oil, garlic, salt and ground pepper to taste.
  10. Stir and leave for 30 minutes to marinate all the vegetables.
  11. I used 25 cm wooden skewers. Soak them in cold water for 30 minutes.
  12. Turn on the oven to preheat to 180 degrees.
  13. Thread pickled vegetables and corn on skewers in a chaotic manner. I got 10 skewers. Take a wide baking dish and place the vegetable and corn skewers on top so that they do not touch the bottom. I didn't fit everything in one go. Can be placed on a baking sheet lined with foil.
  14. Send to the oven preheated to 180 degrees for 30-40 minutes. Roasting time depends on the power of the oven and the size of the chopped vegetables. If there is marinade left, you can lubricate the workpieces with it at the time of baking. You can turn the skewers over several times. If some vegetables start to burn and the rest are not yet baked, cover with foil.
  15. Skewers of vegetables and corn on skewers (in the oven) are ready.
  16. Serve immediately to the table.
